Cover art for this HPCG cookbook was designed by North Carolina native and Greensboro resident William Mangum. Mangum is one of the most popular and respected watercolor artists in the region. He paints a broad and colorful collection of landscapes and architecture, using the four seasons to create his unique backdrops. The cookbook cover art depicts the butterfly garden at Beacon Place, Hospice and Palliative Care of Greensboro's 14-bed residence.

Apple Cheese Quiche 2 (9-inch) Pie Shells, unbaked 4 Eggs 2 Cups Grated Swiss Cheese 1lb Bulk Sausage, cooked and well drained 1 Tablespoon All-Purpose Flour 1 Teaspoon Salt 1 Cup Milk 2 Cups Granny Smith Apples, peeled and sliced 1 Cup Evaporated Milk 1 Tablespoon Butter or Margarine, Melted 1 (4-ounce) Can of Mushroom Slices Preheat oven to 375f. In pie shells, evenly divide and layer cheese, sausage, apples, and mushrooms. In a small bowl, combine remaining ingredients and mix well with a hand mixer. Divide mixture and pour over layered ingredients. Bake at 375f for 45 minutes. Let stand for 5 to 10 minutes to cool before serving.
Note: This refrigerates, freezes, and reheats well. It is delicious hot or cold. It can be served as an entree, or served in smaller portions as hors doeuvres.
